Recipes from TV: Southwest Sweet Potato Salad & Chocolate Cherry Smoothie

You guys! This past Saturday morning I had the opportunity to hang out on TV and talk about my upcoming Resolution Wellness Cleanse! It was so exciting, and such an amazing experience. While I was there I made one of my new favorite cleanse recipes, and I shared an all-time cleanse favorite: Chocolate Covered Cherry Smoothie.

southwestern sweet potato salad

serves 6

Ingredients

  • 4 cups diced sweet potato, roasted
  • 1 cup quinoa, cooked
  • 1 can black beans, rinsed and drained
  • 1 bunch green onions, finely chopped
  • 5 radishes, thinly sliced
  • 1 bunch kale, chopped
  • 1/2 cup pumpkin seeds
  • 1/2 cup chopped cilantro
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • 1/2 tsp salt

Creamy Lime Dressing

  • 4 cups diced sweet potato, roasted
  • 1 cup quinoa, cooked
  • 1 can black beans, rinsed and drained
  • 1 bunch green onions, finely chopped
  • 5 radishes, thinly sliced
  • 1 bunch kale, chopped
  • 1/2 cup pumpkin seeds
  • 1/2 cup chopped cilantro
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • 1/2 tsp salt

how to make

  1. Preheat oven to 400ºF. Toss sweet potatoes with chili powder, salt, and olive oil. Roast for 25-30 minutes, until tender.
  2. While sweet potato is roasting, cook quinoa according to package instructions.
  3. Prep dressing by combining all ingredients in the jug of your blender. Blend on high until creamy and smooth. Set aside.
  4. Once quinoa and sweet potatoes are cooked, combine with remaining ingredients. Dress generously, and season with salt and lime juice to taste.

chocolate covered cherry smoothie

serves 1

Ingredients

  • 2 tbsp fresh lime juice
  • 1 clove garlic
  • 1/4 tsp cumin
  • 1/3 c. cashews
  • 1/2 c. water

how to make

  1. Combine spinach and almond milk or water in your blender. Blend on high until the greens are entirely liquefied. Add all remaining ingredients, blend on high until totally smooth. Enjoy!
